Tacos aren’t just for breakfast anymore! These easy breakfast tacos are loaded with bacon, eggs, and cheese.
I am sort of on a taco binge.
Maybe it’s because I am trying to be more frugal, and eat cheaper meals (my grocery bill is a bit ridiculous lately).
Maybe it’s because I love corn tortillas, ooooh so much.
But I have been loading up corn tortillas with an assortment of different fillings for the past few weeks, and I have been loving it!
Last week I tried Korean BBQ Tacos, and oh man… they were so amazing, I am thinking about making them again for dinner tonight.
For today though, I am sharing a super easy recipe for breakfast tacos. They’re so simple, yet life-changing, you’re going to be wondering why you haven’t been making them for your whole life.
This is just a basic recipe, taking scrambled eggs, fresh crumbled bacon and shredded cheese, but you can do oh-so-much-more with this.
Add some green chile! Add chopped tomatoes! Add mushrooms, bell peppers, or spinach!
You could even play around with some various cheeses! The possibilities here are truly endless, and you can make this your favorite go-to breakfast and whip it up in under 15 minutes.
Breakfast is the most important meal of the day, after all 🙂
Breakfast Tacos
Makes 6 tacos
- 6 pieces of bacon
- 6 eggs
- 6 corn tortillas
- A little olive oil
- Shredded cheese
- Salsa or chopped green chile (optional)
In a pan over medium heat, cook bacon until crisp. Once cool, crumble the bacon and set aside.
Meanwhile, in a sepearate bowl, whisk together eggs. Once bacon is cooked, drain all but 1 tsp of bacon grease, and pour in the whisked eggs. Scramble eggs until cooked, and remove from heat.
In another pan, heat a teaspoon or two of olive oil over medium heat. Once oil is warm, lightly fry the corn tortillas in the oil, until warm and pliable, but not so much that they are crispy.
To assemble the breakfast tacos, scoop in some eggs, top with cheese and sprinkle on some bacon (because bacon really is a grown-ups equivalent of sprinkles). Top with salsa or chopped green chile, if desired.
