Love red chile beef enchiladas? Here is a fun spin on a classic New Mexican dish! Enchilada wontons š
We are a solid 9+ months into the Pandemic, and I have not been cooking much! Well, actually, I cook every day, but only because I have children to feed. What I haven’t been doing is creating new recipes or trying new dishes. Because the COVID-life is hard!
New Mexico has been one of the most restrictive states in the US, in terms of shutting things down. My kids were sent home from school the 2nd week in March, and it’s now December, and they haven’t seen the inside of a school building since.
As a working parent, I know how extremely challenging it is to have young children in a remote school environment, while trying to also have a job. Keeping track of when my 2 kids are supposed to be in their 6+ daily school Google Meet meetings, while also managing my work load and work meetings, and you know, keeping the kids alive, clean, fed, emotionally stable… it’s A LOT.
I am sure every person’s struggles through the Pandemic is real and a lot, so I’m sending a lot of love to the world right now. You know what else I think the world really needs right now? Really delicious New Mexican food.
How to Make Enchilada Wontons
Grab your ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon ground cumin
- salt and pepper, to taste
- 3/4 cup prepared red chile sauce
- 24 wonton wrappers
- 1 cup shredded cheddar cheese
- oil for frying
- 1/4 cup sour cream
- 1 teaspoon prepared red chile sauce
Let’s get cooking:
Start by warming up olive oil in a pan over medium heat. Add in your onions and cook until they’re starting to soften, about 5 – 8 minutes. Next, add in garlic and cook an additional 30 seconds. Add in your ground beef, season it with ground cumin, salt and pepper, and cook until no longer pink in the middle.
Add prepared red chile sauce, stir well, reduce to medium-low, and simmer for 8 – 10 minutes.
(I used prepared red chile sauce from Cervantes, because it’s really good, and Costco sells it in 3 packs for around $10 š But, you can totally make your own red chile sauce, too.)
Line out 4 – 6 wonton wrappers at a time. In the center of each, add 1 tsp of the ground beef, then sprinkle with cheddar cheese.
Using your finger, trace the edges of the wrapper with water. Fold the wrap in half to form a triangle.
Carefully seal the edges, making sure no food is sticking out, and that there are no gaps.
Trace the bottom of the wrapper with water, then bring the two bottom corners together at the bottom.
Heat some oil for deep-frying in a pot or pan. Once the oil is fully heated, deep fry the wontons in batches, until golden brown. Transfer enchilada wontons to a paper-towel lined plate.
While wontons are cooking, combine 1/4 cup sour cream with 1 tsp of prepared red chile sauce. Season with salt and pepper.
