The classic sloppy joes is getting a makeover! These Green Chile Sloppy Joes taste similar to the ones you had growing up, but they feature spicy New Mexican green chile and other New Mexican flavors for a tasty upgrade!
I am a big fan of changing up classic dishes and making them “New Mexican” by adding green chile. It’s super simple and, because green chile is so delicious, it usually turns out tasty.
These green chile sloppy joes are just that – tasty! The green chile works nicely to add a little bit of spice and flavor to sloppy joes, which can otherwise be bland at times.
How to Make Green Chile Sloppy Joes
Start by grabbing your ingredients:
- 1 lb ground beef
- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 cup green chilies, peeled, seeded, and chopped
- 1 cup tomato sauce
- 1 tbsp red wine vinegar
- 1.5 tsp brown sugar
- 1 tsp ground cumin
- salt and pepper, to taste
- 4 hamburger buns
Heat olive oil in a pot over medium-high heat. Add onions and saute for 5 minutes, until starting to soften. Next, add garlic and saute an additional 30 seconds.
Add in ground beef and use a spoon to break it up and mix together with onions and garlic. Continue cooking until ground beef is browned.
Add in remaining ingredients, stir well, and simmer for 10 – 15 minutes.
Toast buns, if desired, then add green chile sloppy joe mix to the bun and enjoy!
I recommend serving these along side homemade calabacitas!
About the Green Chile
I know green chile isn’t always accessible to everyone living outside of New Mexico. There are several different types of green chilies you can add to this recipe:
- Frozen chopped green chile (found in the freezer section at the market)
- Canned chopped green chile (found in the ethnic food isle at the market or on Amazon)
- Fresh green chile (if you’re lucky enough to get roasted green chile between August – October in NM, you can peel and freeze it so you have it all year long)
- Jarred green chile (found on Amazon)

A quick and easy new Mexican style green chile sloppy joes
