Jump to RecipeSalsa verde is one of my favorite sauces to prepare in my kitchen. It’s so versatile – it can be used on enchiladas, spooned on top of eggs, or as a salsa paired chips.
I have even spooned it on top of a grilled steak, sort of like a chimichurri sauce. This stuff can really be a compliment to almost any savory dish!

This easy salsa verde recipe also utilizes all natural ingredients, so it tastes garden fresh.
Salsa Verde Recipe
This recipe uses fresh tomatillos, serrano peppers, onion, and garlic, roasted in olive oil, and pureed with cilantro for a smooth finish.
I like to roast everything prior to blending them because it brings out the flavor of the ingredients. If you opt to just blend the ingredients without roasting them first, it can taste bitter.
Start by removing the husks from the tomatillos and wash off the skin. Cut in half and place in a bowl. Add in red onion, serrano peppers, and garlic cloves. Drizzle in 2 tbsp of olive oil, season with salt, and toss well.
Pour the mixture onto a baking sheet and set the oven to broil.
Broil until tomatillos start to soften and brown – about 7 minutes.
Transfer ingredients to a blender, add fresh cilantro, and blend until smooth. Season with more salt and pepper, if desired.
Salsa Verde Recipe
Ingredients
- 1 lb fresh tomatillos
- 3 serrano peppers
- 1 red onion roughly chopped
- 2 cloves garlic peeled
- 2 tbsp olive oil
- 1/4 cup fresh cilantro
- salt to taste
Instructions

Preheat oven to broil.

Remove husks from tomatillos and wash skin. Cut tomatillos in half and add to a bowl.

Remove stem and cut serrano peppers in half. Add to the bowl with chopped onion, garlic, olive oil, and a pinch of salt. Toss well.

Pour salsa verde ingredients onto a baking sheet, then bake in preheated oven for about 7 minutes, until tomatillos start to soften and brown.

Remove from oven and transfer ingredients to a blender. Add cilantro and blend until smooth. Season with salt to taste.

This salsa is delicious! The only thing is that my salsa turned out kinda brown. I’m assuming this is from roasting the ingredients, but in your picture the salsa is bright green. How do I achieve that kind of look? Thanks again!
