Easy and inexpensive breakfast tacos with bacon and eggs
In a pan over medium heat, cook bacon until crisp. Once cool, crumble the bacon and set aside.
Meanwhile, in a separate bowl, whisk together eggs. Once bacon is cooked, drain all but 1 tsp of bacon grease, and pour in the whisked eggs. Scramble eggs until cooked, and remove from heat.
In another pan, heat a teaspoon or two of olive oil over medium heat. Once oil is warm, lightly fry the corn tortillas in the oil, until warm and pliable, but not so much that they are crispy.
To assemble the breakfast tacos, scoop in some eggs, top with cheese and sprinkle on some bacon. Top with salsa, if desired
