Red Chile Pancakes

Homemade pancake batter with New Mexican red chile sauce folded in for a spicy kick!

Ingredients

  • 3/4 cup unbleached all purpose flour
  • 3/4 cup yellow cornmeal
  • 2 tbsp sugar
  • 3/4 tsp baking powder
  • 1 3/4 tsp baking soda
  • 1 tsp salt
  • 1 1/4 cup buttermilk
  • 1/4 cup red chile sauce
  • 3 tbsp butter melted
  • 2 eggs

Instructions

  1. Stir together flour, cornmeal, sugar, baking powder, baking soda, and salt.  In a separate bowl. combine buttermilk, red chile, butter, and eggs and whisk until fully incorporated.  

  2. Add wet ingredients to dry ingredients and stir until mixed.  

  3. Heat oil, butter, or bacon grease in a skillet over medium heat.  Add 1/4 cup of batter to the skillet and heat until golden brown on the bottom, then flip and cook until the other side is golden brown.  

  4. Repeat with remaining batter.
