Green Chile Eggs Benedict

A spin on classic eggs benedict, made with New Mexican green chile

  • 8 strips bacon
  • 4 eggs
  • 4 small flour tortillas
  • 2 cups prepared hollandaise sauce
  • 1/2 cup green chiles diced


  1. Cook bacon over medium heat, until crisp. Remove from pan, and set aside. Leave 1 tbsp of bacon grease in the pan, and fry the eggs, two at a time, until desired doneness. Set aside.
  2. Crisp flour tortillas in the same pan, adding a little bacon grease if needed.
  3. Add diced green chile to prepared hollandaise sauce, stirring to combine.
  4. Layer a flour tortilla on a plate, followed by 2 pieces of crumbled bacon, one fried egg, and 1/4 - 1/2 cup hollandaise sauce (some like it more saucy, some like it less!). Enjoy!
