A quick, easy, and super tasty huevos rancheros recipe!
Huevos rancheros are typically a breakfast dish, but I love them any time of day.
The first time I tried huevos rancheros was at a restaurant in Portales, NM, called El Rancho. They were made with corn tortillas topped with two eggs, ground beef, and smothered in red chile.
Huevos Rancheros – the Basics
I have made several different versions of huevos rancheros over the years, but the basic recipe includes:
- Corn Tortillas
- Beans
- Eggs (huevos)
- Red Chile
- Cheese
Let’s Talk About Red Chile
While traditional huevos rancheros is topped with a salsa fresca from tomatoes, in New Mexico we are quite loyal to our red chile. Every huevos rancheros I have been served in NM is topped with some form of red chile sauce.
There are 3 basic ways to get a great red chile sauce:
- Buy the red chile sauce already prepared. You can find them at most grocery stores in New Mexico, or on Amazon.
- Make the red chile sauce from red chile powder. Made in New Mexico has a great recipe.
- You can make the red chile sauce from red chile pods. Check out the bottom of this post for a recipe for red chile sauce.
I usually use prepared red chile for this recipe, just so it’s quick to make.
Once you have your red chile sauce pinned down, you’re ready to make New Mexican Huevos Rancheros!
New Mexican Huevos Rancheros
Start by lightly frying corn tortillas in a little oil over medium-high heat. You want to brown them until they’re somewhere between soft and crisp.
Top the tortillas with warmed pinto (or black) beans.
Cook eggs over easy and place them on top of the beans.
Next comes as much red chile as you like!
Pile on shredded cheddar cheese.
Grab a fork and enjoy!
A Printable Recipe – Huevos Rancheros
New Mexican Huevos Rancheros
Huevos Rancheros a la New Mexico, topped with a flavorful, spicy red chile sauce.
Ingredients
- 8 corn tortillas
- 1 tbsp olive oil
- 2 cups pinto or black beans
- 1 cup red chile sauce
- 2 tbsp butter
- 8 eggs
- 1 cup cheddar cheese shredded
Instructions

Add olive oil to a pan over medium-high heat. Lightly fry the corn tortillas until brown, but still a little soft.

Warm pinto beans in a small pot over medium-high heat. Warm red chile in a small pot over medium-high heat.

Melt butter in a frying pan over medium heat. Cook eggs, 2 – 3 at a time, until over easy.

To assemble the Huevos: Top each corn tortillas with 1/4 cup of beans. Place an egg on top of beans, and spoon on red chile sauce. Top with shredded cheddar cheese.
